National California Strawberry Day!

Today we celebrate National California Strawberry day as part of the National Nutrition Month.

Strawberries are my all-time favorite fruit since I was a kid.  They are not only low in sugar and calories, but they provide a unique combination of essential nutrients, dietary fiber, and phytochemicals.  Clinical research suggests that eating a serving of just eight strawberries a day may improve heart health, reduce the risk of some cancers, support brain health, and help manage diabetes.  A serving of strawberries has more vitamin C than an orange and is packed with beneficial antioxidants and nutrients including potassium, folate, and fiber.

California strawberries are healthy and can be enjoyed every day in different types of food, from salad to dessert.  One of my favorite recipes is adding some strawberry to my Kale salad mixed with some toasted pecans and a drizzle of some slaw dressing.
