The cake was inspired by a traditional dessert called “Kirschwasser,” which is a type of cherry brandy made in the region. The original recipe for Black Forest Cake called for a chocolate sponge cake made with cocoa powder, whipped cream made with Kirsch, and sour cherries.

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and flour.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar together until pale and fluffy. Add the dry ingredients to the egg mixture and mix well.
  4. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Allow the cake to cool completely, then use a serrated knife to slice it into three equal layers.
  6. Drain the cherries and reserve the syrup. In a mixing bowl, whip the heavy cream, sugar, and Kirsch until stiff peaks form.
  7. Place the bottom layer of the cake on a serving plate and brush it with some of the cherry syrup. Spread a layer of whipped cream over the cake, then add a layer of cherries on top.
  8. Repeat this process with the second layer of cake, then add the top layer of cake. Cover the entire cake with whipped cream, then decorate with cherries and chocolate shavings.
  9. Refrigerate the cake for at least an hour before serving.
