Today we celebrate a delicious German dessert and my favorite, the Black Forest Cake. This day is observed on March 28th.
Schwarzwalder Kirschtorte is the German name for Black Forest Cake literally a “Black Forest Cherry-torte”. It consists of several layers of chocolate sponge cake sandwiched with whipped cream and cherries and usually decorated with additional whipped cream, maraschino cherries, topped with chocolate shavings.
Traditionally “Kirschwasser” a clear spirit made from sour cherries, is added to the cake hence the name. Some types of spirits are used like rum which is common in Austrian recipes.
The liquor called Schwarzwalder Kirschtorte is distilled from tart cherries. The distinct cherry pit flavor and alcoholic content give the dessert its flavor. Some source claims that the name of the cake is inspired by the traditional costume of the women of the Black Forest region, with a hat with big, red pom-oms on top called Bollenhut.
